For milk pasteurisation or for bulk cooking in boiling pans, one of the biggest challenges for fast turn around is cooling the product sufficiently to remove it from the heating vessel. With the aid of ice water cooling, a products can be brought from cooking temperature down to around 10 Degrees C very quickly. While tap water can be used to chill products, this will only allow fast cooling to 30-40 Degrees C. To rapidly cool after this temperature reduction, ice water is required.
