These boiling pans feature a pressure, autoclave lid for achieving a faster cook. Pressure steam will allow a temperature increase which will in turn yield a faster cook time.
The gas models can be heated by direct or indirect heat. Use indirect heat if you are cooking delicate recipes which easily catch and burn, for example custard.
